Shalosh Sweet Matzah Brei ✨🍯🍳
Passover is always a time we cherish in our home. We hold close the traditions that have been passed down, and over the years, we have gently shaped a few of our own. Even as the girls grow older, there are certain comforts and rhythms of the holiday that remain part of who we are.
As a gentle note, I am not deeply religious, and I know Passover is observed differently from home to home. In some communities, some of the ingredients used in this recipe may not be considered kosher for Passover. This is simply my own familiar version, made with warmth, memory, and a little sweetness.
What you’ll need
🫓 4 matzah sheets
🥛 About 1 cup milk, plus a little more if needed
🥚 4 eggs
🥄 2 teaspoons vanilla extract
🧈 Butter for the skillet
🍯 Syrup for serving or drizzling
🍓 Optional: powdered sugar and fresh fruit🫐
How to make it
Break the matzah into pieces in a large bowl.
Add the milk and let it soak in until it softens.
Melt butter in a skillet over medium heat.
In a separate bowl, whisk the 4 eggs and add the vanilla extract.
Spoon the batter into the pan and tops it with the egg mixture. Stir it to combine and then flatten it a bit with a spatula. I made one big pancake-looking matzah brei and then divided it into 4 slices.
Cook until golden on one side, then flip and cook the other side until set and lightly browned.
Serve warm with syrup drizzled over the top. Add a little powdered sugar or fruit if you want it extra pretty and extra sweet ✨

Shalosh note:
Matzah brei is one of those recipes that does not need to be exact. You can make it softer, crispier, sweeter, or more simple depending on how you like it.
It is less about perfection and more about the feeling it brings to the table.
